Method

  1. Mix ground pork with garlic, shallots, sugar, fish sauce, and black pepper. Form into small patties.
  2. Marinate pork belly slices with a bit of fish sauce, sugar, and black pepper.
  3. Grill the patties and pork belly slices over medium heat until cooked and slightly charred.
  4. Prepare rice vermicelli noodles according to package instructions. Drain and set aside.
  5. Make the dipping sauce: mix lime juice, sugar, fish sauce, water, and chopped chili.
  6. Serve grilled pork in a bowl with rice noodles, lettuce, mint, cilantro, perilla, and pickled carrots and daikon. Pour dipping sauce over or serve on the side.

Bún Chả is all about the balance of flavors — savory grilled pork, fresh herbs, tangy and slightly sweet dipping sauce, and soft rice noodles.
You can adjust the dipping sauce to taste, adding more lime juice or sugar depending on your preference. Traditionally, this dish is eaten by dipping the noodles and herbs into the sauce with pieces of pork.
For an extra smoky flavor, try grilling the pork over charcoal. Leftovers can be reheated gently but are best fresh. Serve with extra herbs on the side for a more authentic experience.
